Flight-Dynamix LCC delivers softwares to display a functional, interactive, hi-res bitmapped cockpit. They’ve just released one for the F-16C Fighting Falcon in X-Plane 9 (after the FSX version still available here).

And there is now also one for the F-35 in FSX here.
